I met my husband and business partner in San Francisco in 1990.
I was running my shop on Pier 39 called The Fudge Factory.
It was during these years that I learned the value of overseeing every facet
of the business personally and the benefit of standing by your convictions
in producing the best product possible.
We decided to move back to England, specifically to the beautiful city of Bath,
to try and create another successful business "this side of the pond".
In 1995 we opened our shop called "The San Francisco Fudge Factory"
less than one minutes walk from the famous Roman Baths.
We place a strong emphasis on maintaining the integrity and the quality of the fudge
by using only natural ingredients - whole milk, real butter and the finest chocolate.
We continue to make everything by hand at the San Francisco Fudge Factory

All our fudge is made using the freshest ingredients, in our shop in the centre of Bath. We have an enormous copper cauldron in the corner in which the fudge is boiled up to a certain temperature at which point the old San Francisco cable car bell is rung to summon a helper quickly (it's all in the temperature)
The fudge is poured on to the marble table ready to be beaten with a metal paddle. It is this process of moving the cooling fudge around on the table which keeps it smooth and silky.
As it approaches set up point a smaller spatula is deployed to mould the fudge into it's final shape which is a long log stretching the length of the table. Each individual fudge cook has a unique style and it is in the final moulding that this becomes apparent, (but they do all admit that my fudge is the best as I own the shop!)
We give it another ten minutes or so and it is ready to cut into 100 g pieces and be put in our display case to be sold. Our favourite saying at the San Francisco Fudge Factory is: 'Arguably the best fudge in the world' |
