Although an old classic this is our own recipe and it is a recent addition to our shelves. We make small batches in the same copper pot as is used for our fudge; again the timing is crucial and at the right stage of colour and texture the batch is poured onto our marble slab in a large pat which then cools off and is broken up into bite size shards to be bagged up for our customers delectation
