To make our peanut brittle, we cook sugar, glucose syrup, butter and sodium bicarbonate very high temperature; at the last minute the peanuts and a dash of vanilla are thrown in and it is poured on to the buttered and floured marble slab, where it is stretched to thin it out before it hardens into pieces of classic peanut brittle. All made by hand, no additives: what you see is what you get!
